The Crispy Eggplant Parmesan Recipe

A deeply satisfying Italian classic made the right way: saucy, golden, crispy and completely irresistible. 

There are some recipes that will just stop you in your tracks. I remember the first time I made  this eggplant Parmesan Recipe, I genuinely stood over the pan and ate almost half of it before it even made it to the table. I am not embarrassed about it. This is a statement on how good the eggplant parmesan dish is. 

I am talking about the combination of golden eggplant, crispy, rich tomato sauce and bubbling mozzarella that feels both indulgent and grounding at the same time. Let’s be honest, most eggplant recipes fall into one of two camps: we have the kind that  is deep fried and is absolutely delicious but will leave you feeling heavy, we also have the baked kind. This one is healthier but it comes out a little soft and underwhelming. I want the best of both worlds. 

With this recipe we are going to use a shallow pan fry method instead of deep frying. You will get that gorgeous golden crust, that satisfying crunch when you cut through it, all of this without the heaviness. Your eggplant slices are coated in a seasoned breadcrumb and Parmesan mixture that Will crisps up beautifully in just a little olive oil. 

This is the kind of dish that looks  like deep red sauce, stretchy melted mozzarella, golden eggplant and a final scattering of fresh basil. But it is not complicated at all. It is very approachable and this is what I love the most about it. 

I have to admit this is genuinely one of my favorite easy eggplant recipes because it feels elevated without requiring any advanced cooking skills. All you need is a little patience, the right technique and good ingredients. 

Ingredients you will need 

For a good eggplant Parmesan you will definitely need good Ingredients, not too fancy, you just need quality staples that do their job well. 

For the eggplant 

  • Two large eggplants about 2.5 pound total sliced into ¼ Inch rounds 
  • One tablespoon kosher salt this is for drawing out moisture 
  • Two large beaten eggs 
  • One cup all-purpose flour 
  • 1.5 cups Italian breadcrumbs 
  • ½ cup finely Parmesan cheese 
  • One teaspoon garlic powder 
  • One teaspoon dried oregano
  • ½ teaspoon black pepper
  • Olive oil for pan frying about  ½ a cup

For the assembly 

  • Three cups homemade or good quality store brought Mariana sauce 
  • 2.5 cups shredded low moisture Mozzarella 
  • ½ cup freshly grated Parmesan cheese 
  • Fresh basil leaves to finish 
  • Red peppers flakes, optional 

How to salt eggplant and why it matters

This is a step you can not skip in any great Eggplant Parmesan Recipe, it’s salting the eggplant. I used to always skip this when I was in a rush and I have always regretted it. The difference is absolutely remarkable. 

Eggplant holds a lot of moisture inside, you need to draw the moisture out before cooking, when you don’t draw the moisture out it will steam inside the bread instead of Crispin up. This will result in a soft, soggy texture that makes people think they don’t like eggplant when really they just have not had it prepared well. 

Here’s how to do it properly

  • You Will need to layer your eggplant slices in a single layer on a baking sheet lined with paper towels
  • You then sprinkle generously with kosher salt on both sides 
  • They need to sit for at least 30 minutes, ideally 45 to 60 minutes. 
  • Pat dry thoroughly with fresh paper towels before breading. 

The paper towel will become damp and your eggplant will look slightly deflated and that is what we exactly want. The slices are now primed for crisping. This one step is the secret behind truly great easy plant recipes that taste restaurant quality at home. 

Step by step instructions for the best eggplant parmesan recipe

Step 1: Bread the Eggplant

Take three shallow bowls to set up a simple breading station. one with beaten eggs, one with flour and one with your breadcrumb and parmesan mixture ( Combine Parmesan, breadcrumb, garlic powder pepper and oregano) Dredge each eggplant slice in flour, shake the excess, dip in egg. then coat thoroughly  in the breadcrumb mixture. Finally, pressing gently on the coating adheres well. 

Step 2: Pan frying till golden 

You will need a generous drizzle of olive oil which needs to be heated in a large skillet over medium high heat. Your oil needs to be hot enough so that a breadcrumb drops in sizzles immediately. Cook your eggplant slices in batches, about two to three minutes per side, until it’s  deep golden and brown. Please do not overcrowd   the pan, we don’t want it to steam, instead we want it to be  crispy. Transfer each batch into a wire rack, and not on paper towels, so that the bottom stays crisp.  

Step 3: layer and bake

Your oven must be preheated to about 350°F. You will have to spread a thin layer of Mariana sauce on the bottom of  a 9 X 13 baking dish, the perfect size to prevent sticking. Next you need to add a layer of eggplant slices, then sauce, then mozzarella, then sprinkle Parmesan. Repeat until you have used everything up, finishing with a final layer of sauce and a generous blanket of mozzarella on top. 

This must be covered loosely with foil and baked for 20 minutes. Remove the foil and bake for another 15 to 20 minutes. We want the cheese to be bubbling and golden at the edges.  It needs to rest for about 10 minutes at least before slicing. I know waiting is the hardest part but it is totally worth it. 

Tips for the crispiest eggplant parmesan

We want that crispiness. It is everything in this dish. It is the reason why people ask for seconds and thirds.  Here are some non-negotiable tips. 

  • You must use low moisture mozzarella. Fresh mozzarella is beautiful; it will however release too much water and will make the dish soggy. You can save it for your caprese salad. 
  • If you want even more crunch, use panko breadcrumbs. Italian breadcrumbs are more traditional, but a half and half blend with panko is going to take it to another level. 
  • Use a wire rack to rest it and not on paper towels after frying. We want the air to circulate underneath to stay crispy. 
  • Avoid at all cost saucing the eggplant too heavily.  A little sauce is going to go a long way. Adding too much makes the layers wet and dense. 
  • Slice your eggplant evenly. Uneven slices will cook at different rates. A mandolin is your best friend here. 
  • You need to let it rest before you serve it. This will allow the layers to set and your slices will hold beautifully when cut. 

The best tomato sauce for eggplant parmesan 

The sauce is the soul of the dish. I firmly believe that a great eggplant Parmesan Recipe lives and dies by the quality of its tomato sauce. 

I have a go-to and is a simple, slow simmered marinara :  You need a can of good San Marzano tomatoes, a few garlic cloves sautéed in olive oil until fragrant, salt, a pinch of sugar, pepper and a handful of fresh basil. You will let it simmer for at least 20 minutes to deepen the flavor.  The slow simmer makes everything taste more intentional and complex. 

If you are going to use store bought, choose one with minimal ingredients and a robust flavor. There is a crowd favorite Rao’s homemade and it is a crowd favorite for a reason. It tastes genuinely homemade. To Amp it up add a little extra garlic and a drizzle of good olive oil before you use it. Nobody will know. 

How to layer eggplant parmesan like a pro

This process might seem like a small detail, but it does matter. Think of lasagna. The order and the thickness of each layer affects the final texture and flavor balance of every bite. 

My layering order 

  • The bottom will be thin layer , this will prevent sticking and will add flavor to the base
  • Eggplant slices in a single overlapping layer 
  • Spread gently a few spoonfuls of sauce 
  • A generous handful of mozzarella cheese 
  • A dusting of Parmesan 
  • Repeat until done, ending with a sauce and mozzarella on top

This is a dish that pairs beautifully with so many things, yet it shines as a vegetarian main course. Let me share some of my favorite ways to serve it as part of a complete Italian dinner spread:

  • Serve it alongside spaghetti aglio e olio for a carb forward this is a crowd pleasing dinner. 
  • You can pair  it with a simple arugula salad dressed with Parmesan and lemon. The peppery greens cut through the richness of the eggplant perfectly. 
  • This one is a non negotiable in my opinion, add a loaf of crusty garlic bread
  • If you want a lighter option, serve it over zucchini noodles or alongside roasted cherry tomatoes. 
  • Set out a glass of Chianti or a light sangiovese to really lean into the Italian diner idea vibe. 

To be honest ti’s is one of those vegetarian main course dishes that feels special enough for a dinner party but is absolutely doable on a Tuesday night. This is a very rare balance and it is one of the many reasons I always come back to this recipe.

One of the best things about this great Parmesan Recipe is how well it stores and reheats. In fact, I think leftovers taste even better the next day. The flavors meld together overnight in the most wonderful way you can think of. 

Make ahead

You can fry the bread and slice the eggplant slices up to 24 hours in advance. You will need to store them on a wire rack, and closely covered in the refrigerator. When you are ready assemble and bake. 

Alternatively fully assemble the dish, cover tightly and refrigerate overnight. Add an extra ten minutes to cover the baking time if it is going straight from fridge to oven. 

Storage and reheating 

  • Refrigerator: This can keep well in  an airtight container up to four days 
  • Freezer: You can freeze fully cooked eggplant Parmesan for up to three months. Thaw overnight in the fridge before reheating. 
  • Reheating: If you want the crispiest result, reheat  the oven at 350 ° F  covered with foil for 15 minutes, then uncovered for five to ten minutes. The microwave works in a pinch but the breadcrumb coating will soften. 

Frequently asked questions about this eggplant parmesan recipe

Do I have to peel the eggplant for the eggplant Parmesan? 

You do not really have to take it out. Young, fresh eggplants have thin tender skin that will become completely unnoticeable once cooked. For larger and older eggplants, the skin can be slightly tougher and more bitter, so peeling is a must and a good idea. I usually peel mine partially leaving a few strips of skin for visual interest and texture. 

Can I also make it without frying it? 

Yes, you can also bake the breaded eggplant slices instead of frying them. You will have to brush both sides generously with olive oil and bake at 425°F on a wire rack over a baking sheet for about 20 to 25 minutes, flipping half way. The result is however less golden than pan fried, but still very delicious and significantly lighter 

What is the best eggplant to use for this recipe? The best and classic choice is the Globe eggplant, they are large enough to give you a good sized round for layering. You want to use eggplants that are firm and heavy for their size with smooth, shiny skin. Please avoid any with soft spots or wrinkled skin, as those tend to be more bitter and hold excess moisture. 

Why is my eggplant soggy? 

Sogginess is usually as a result of three things. Not salting the eggplant long enough, overcrowding the pan while frying, or using too much sauce. You need to make sure to salt and dry the eggplant thoroughly, then fry in batches and make there is enough space between the slices and use sauce with a light hand when layering 

Is this eggplant Parmesan Recipe gluten free? No as written – the recipe used regular flour and Italian breadcrumbs. However it is very easy to adapt. You can simply substitute the all purpose flour with gluten free breadcrumbs or crushed gluten free crackers. The rest of the recipe I’ll stay the same and the results are just as delicious. 

Can I add meat to this dish? 

Absolutely, yes you can. There are some people that love adding a layer of Italian sausage or ground beef to the layers for a heartier version. With that said,  the eggplant is so satisfying on its own that I honestly never felt the need. It is one of those vegetarian main course dishes that earns its place at any table without compromise. 

This is a recipe worth making over and over again.
